Garam Masala Plus :( Everything what you will need to make a GOOD_CURRY, besides adding few more light ingredients i.e. onion, garlic, ginger, chili, turmeric, and paprika to taste.)
1.5tbsp. Fennel seed
1/2tsp. Cardamom seeds
1tbsp. Black Cardamom seeds
2-1'' Cinnamon sticks-Broken
2tbsp. Coriander seeds
1tsp. cumin seeds black
1tsp. Cumin seeds white
1/2tsp Black whole pepper/1/2 tsp. whole white pepper
1tbsp Pomegranate seeds
2ea. Star Anise
4ea. Bay Leaves
1tbsp. Fenugreek seeds
Heat a heavy skillet to medium and gently roast all the ingredients except bay leaves, until turn a few shades darker. Stir occasionally. Do not try to speed the process by turning the heat up as the spices will burn on the outside and remain raw inside.
When the spices are roasted turn off the heat and allow the spices to cool.
Once cooled, grind them all together, to a fine powder in a clean, dry coffee grinder, or a Mortar Pestle.
Store in an air-tight container in a cool, dark place.
Note: Basic and simple Garam masala is a five spices mixture of roasted ground cardamom, cinnamon, coriander, cloves, cumin.
